Anniversary weekend!

Tomorrow is my husband and I's 1 year anniversary! They say the first year is the hardest and if you make it through the first year you can make it through the rest. I am thinking the second year may pose more difficulties with having our first baby ;) Either way I think we will be just fine! I have an amazing man at my side and I cant wait for Audrey to get here to see how wonderful her daddy is!



Eric and I are going out to P.F. Chang's tonight for dinner! I am super excited cause I have been craving some good Chinese food. Normally I wouldn't want to pay their price but its our anniversary so we figured it was the best time. We decided to change things up a bit. Normally we go all out for holidays and presents spending WAY too much on each other. I told him I wanted our anniversary to be less about gifts and more about each other. So today he is doing his little surprise and tomorrow out actual anniversary I am doing mine. I am excited for mine. I put a lot of thought into it! So we shall see what today hold later on ;)

On Thursday I made pulled pork and it was DELICIOUS. Eric said he would like me to make it again! I got the recipe off Pinterest:

Here's what you'll need:

2lb pork butt
one onion, chopped
2 cloves garlic
salt & pepper
3 tbsp Worcestershire sauce
24 ounces of Dr. Pepper
Sweet Baby Ray's BBQ sauce

First, you put the chopped onion into the slow cooker.  Then you season the pork.  Sprinkle the seasonings all over the meat and rub it in really well.  Then place the meat in the slow cooker and add the Dr. Pepper and W-sauce.  Cook on high for about five hours, until it can be easily shredded.


After it's cooked, take the meat out, shred it and put it back into the slowcooker (make sure you emptied out previous contents of slow cooker and washed it up).  Add the BBQ sauce and then slap some on a bun when ready and enjoy! 




I am not sure what I will make for this following week sense my goal is to try at least one new recipe a day. I am excited though and I love watching Eric enjoy my food!
